a thanksgiving favorite

Happy Thanksgiving, friends!  I hope that you all have a lovely day.  David and I are celebrating Thanksgiving at our house.  It will be just the two of us and the pups.  We have never really held a holiday on our own, so it will be a little different, but hopefully sweet and delicious.  I am attempting to make a brisket-  I’ll let you know how it goes.  Anyways, today I wanted to share a Thanksgiving favorite.  They are actually perfect all fall and winter, but these muffins are a Thanksgiving must!  I baked this batch last night, and the whole house still smells amazing  Here is my very simple recipe for Pumpkin Chocolate Chip Muffins. xo

Pumpkin Chocolate Chip Muffins

1 1/2 cup of sugar
1/2 cup of vegetable oil
2 eggs
1 cup canned pumpkin (or if you are fancy, you can make your own)
1 3/4 cup of flour
1/2 tsp. of baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp of pumpkin pie spice*
5 tbs and 1 tsp. of water
1 cup of chocolate chips

Preheat oven to 350
Combine dry ingredients
Mix wet ingredients together
Add the dry mixture into the wet slowly and mix only until everything is combined
Bake for 27-30 minutes

* Ingredients for pumpkin pie spice:
1/4 tsp. ground clove
1/2 tsp. ground allspice
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon

    What a wonderful muffin!! They look so good. These would be perfect for pregnant or breastfeeding mommies.
